Add thick coconut milk and cook on medium flame for 3-4 minutes. In the meantime, dice the onion and smash the garlic. Add chicken breasts (see note), onion, chickpeas, tomatoes and sweet potatoes. Cook for 1-2 minutes, until fragrant. Transfer chicken to a plate. In a large saucepan, heat the coconut oil. Cook & enjoy! Pour the mixture over the contents of the slow cooker. To serve, remove chicken and shred (or keep chicken on bone if your family likes it that way.) We added quartered new potatoes, upped the curry to 4 Tbsp, added a pinch of red pepper flakes, and it was still on the bland side, though pleasantly sweet with the coconut milk. Marinate in the refrigerator for a minimum of 2 hours and up to 4 hours.
